Eleanors is named after 18th century Scottish noblewoman, Lady Eleanor MacDougal, who sailed to the Caribbean in search of a new life after a fall from grace in her homeland. Eleanor first landed in Antigua and slowly made her way through the Caribbean islands, picking up work as a cook and seamstress as she moved from place to place. Along the way, she wrote down the recipes she learned from local cooks in her journal. Eventually, she made her way to Jamaica, where she caught the eye of a local sugar cane plantation owner who courted and eventually married her.

Adrian Weichenberger was born in Salzburg, Austria in April of 1974. Like many professional chefs, Adrian’s love of food was fostered during his childhood, when at an early age he began cooking with his grandmother. After graduating from the apprentice ship program in 1992 at the Hotel Goldener Hirsh which is one of the most renowned Hotels in Salzburg he staying in Austria for a few more years working at several fine dining restaurants to perfect his craft in raditional European cuisine. In 1996 Chef Adrian left Austria for Bermuda where he worked for a year at the Hamilton Princess before testing the water in the Cruise Ship industry on the Luxury Cruise Line Seabourn.

After working for several Restaurants & Hotels in the Caribbean Chef Adrian made his home with Sandals Resorts where he has been working for the past 7 years.

Discover Authentic Jamaican Jerk. Believed to have originated with Jamaica’s Arawak Indians, jerk cookery began as a preservation method. The Maroons of Jamaica, who once sought refuge in the island’s Blue Mountains, eternalized the Arawak’s ancient jerk technique by spicing or seasoning the meat, wrapping it in leaves, then placing it on hot rocks over a lattice of wood. This technique evolved with the use of different spices to the cooking style that we know today as Jerk. At the Jerk Shack, chefs apply the jerk cooking style using a marinade or paste that incorporates pimento (allspice) and scotch bonnet peppers.

For generations, jerk has been a cherished culinary art of Jamaica, and now, jerk’s pungent flavor and irresistible aroma have made it a worldwide favorite.
